Strawberry Bruschetta

I’m a fiend for this…I went to a baby shower and the whole theme was “Berry First Birthday” and this was one of the appetizers. It was so good and I probably ate way too many of them, and think I just really liked the glaze :P


Ingredients

1 baguette, cut into 1" slices

1/4 cup plus 2 tsp. extra-virgin olive oil, divided

Fresh mozzarella (one log should be fine)

2 cups strawberries, chopped

2 Tbsp. fresh basil, thinly sliced (optional)

Balsamic glaze, for serving


Directions

Step One:

Preheat oven to 400°.

Step Two:

Place baguette slices on a medium sheet tray and drizzle or brush with 1/4 cup olive oil. Bake until bread is toasted, about 10 minutes.

Step Three:

Cut up the mozzarella into small slices and put on top of the toasted baguette (you can melt the cheese on top or not).

Step Four:

Garnish with basil (optional) and drizzle with balsamic glaze. Then you’re done!


I searched for recipes and kind of made some tweaks to make it taste like what I had there (like switching out ricotta for mozzarella). You can use cherry tomatoes (which toasted lightly is also so good!) or strawberries, but I honestly liked it with the strawberries more. Try both cherry tomatoes and strawberries and comment which you liked better.
